The white truffle, also known as the Alba truffle (Tuber magnatum), is considered the finest and most expensive truffle in the world and comes mainly from the Alba region in Piedmont. It ripens from September to January and can also be found in parts of Istria. The pulp develops intense aromas of honey, onions, hay and garlic. In contrast to the other types of truffles, the white Alba truffle can be grated directly over food after cooking. The Alba truffle is perfect with meat, fish dishes, pasta and eggs. Just a small pinch is enough to give the menu a gourmet taste.
